Pistachio Tres Leches Cake

Ingredients

  • 4 Eggs
  • 160g or 3/4 cup of sugar
  • 176g or 1 1/2 cups of flour
  • 1 tbsp baking powder
  • Milk mixture:
  • 7 pods of cardamom
  • 300ml whole milk
  • 250g condensed milk

Topping

  • 250g whipped cream
  • Crushed pistachios

Instructions

  • Butter the baking dish and preheat the oven at 170C. 
  • Beat eggs until tripled in volume. Fold in sifted flour and baking powder gently. 
  • Pour batter into the baking tray and bake until a toothpick comes out clean. 
  • Let the cake cool and poke holes in it. 
  • Heat milk with cardamom pods, add condensed milk, and strain. Soak the cake completely in the milk mixture and chill. Whip heavy whipping cream with powdered sugar. 
  • Cover the cake with whipped cream and sprinkle crushed pistachios on top. Decorate and serve chilled.
