Basic Vanilla Sponge

Ingredients

  • 280 gm flour / 2 1/4 cups flour
  • 1.5 tbsp baking powder
  • 170 gm sugar / 3/4 cup sugar +2 tbsp
  • 150 gm vegetable oil / 2/3 cup
  • 1 tsp vanilla extract
  • 180 ml milk / 3/4 cup milk
  • 4 large eggs

Instructions

  • Line two 9 inch baking pans with parchment paper.
  • Preheat the oven to 175°C.
  • Beat the room temperature eggs with sugar and vanilla extract until they become light and fluffy.
  • Add milk and oil, then mix them in.
  • Add the sifted flour and baking powder in portions, mixing lightly.
  • Once the flour is incorporated, stop mixing. Do not overmix the batter.
  • Pour the batter equally into two 9 inch lined pans and bake for 25-39 minutes or until a toothpick inserted comes out clean.
