Ingredients
- 280 gm flour / 2 1/4 cups flour
- 1.5 tbsp baking powder
- 170 gm sugar / 3/4 cup sugar +2 tbsp
- 150 gm vegetable oil / 2/3 cup
- 1 tsp vanilla extract
- 180 ml milk / 3/4 cup milk
- 4 large eggs
Instructions
- Line two 9 inch baking pans with parchment paper.
- Preheat the oven to 175°C.
- Beat the room temperature eggs with sugar and vanilla extract until they become light and fluffy.
- Add milk and oil, then mix them in.
- Add the sifted flour and baking powder in portions, mixing lightly.
- Once the flour is incorporated, stop mixing. Do not overmix the batter.
- Pour the batter equally into two 9 inch lined pans and bake for 25-39 minutes or until a toothpick inserted comes out clean.
