Carrot Cake with Cream Cheese Frosting

Ingredients:

  • 225g (1¾ cups) flour
  • 1.5 tsp baking powder
  • 3/4 tsp baking soda
  • 1 tbsp cinnamon powder
  • 3 eggs
  • 140g (2/3 cup) white sugar
  • 60g (1/3 cup) brown sugar
  • 200g (1 cup) oil
  • 1.5 tsp vanilla extract
  • 250g carrots, shredded 2 cups
  • 1/2 cup raisins or walnuts
  • Frosting:
  • 113g (1/2 cup) butter, room temp
  • 225g (1 cup) cream cheese, room temp
  • 100g powdered sugar

Instructions:

  • Preheat the oven to 350°F (175°C).Prepare two 7-inch pans.
  • Whisk eggs, white sugar, and brown sugar until combined. Add vanilla and oil, mixing well.
  • Mix flour, cinnamon, baking powder, and baking soda in a separate bowl. Gradually add to wet ingredients. Fold in carrots and optional raisins or walnuts.
  • Divide batter into pans and bake for 35 minutes, or until a toothpick comes out clean.
  • For Frosting, beat cream cheese until smooth.Separately, beat butter with powdered sugar until light and fluffy. Gradually mix in the cream cheese. Assemble the cake as mentioned in the video.
